Lima beans, also called butter beans, might just be the next best thing to edamame or fresh green peas. Cook lightly. Lima beans are a very good source of cholesterol lowering, blood sugar modulating fibre which makes them an extremely good choice for persons with diabetes, insulin resistance or hypoglycemia. When combined with whole grains such as rice, lima beans provide virtually fat-free high quality protein. They are an excellent source of molybdenum and iron and can make a major contribution to the heart and cardiovascular health due to their folate and magnesium content. Their manganese helps energy production and acts as an antioxidant to disable free radicals.
